Our inspiration

Αυτό το κρασί γεννήθηκε από αυτή την πεποίθηση: μια Νάουσα ριζωμένη στις παραδόσεις του τόπου μας, αλλά αποφασισμένη να τις εκφράσει με έναν πιο σύγχρονο τρόπο.

How its made:
Fermentation took place at 18–22°C with 20 days of skin contactresulting in intensity, structure, and layered aromatics.

The wine remained on fine lees for one month to build roundness and texture.
Malolactic fermentation was completed in full, softening the natural acidity of Xinomavro and contributing to its balance.

It then aged for 18 months in French oak barrels — enough to add complexity without overwhelming the grape’s character.

After that, it rested for at least one year in bottle before release, allowing it to reach harmony and finesse.

Concentrated red fruit (cherry), sun-dried tomato, black olive, and earthy undertones of smoke and forest floor.

The oak presence is subtle and supportive, adding notes of cocoa, toasted bread, and black pepper.

Structure and barrel integration allow for cellaring of 8–10 years and beyond, evolving into more tertiary, savory expressions over time.

Structured yet refined, with finely grained tannins, vibrant acidity, and a long, unfolding finish.
