Vinification & Aging
For Chronos, we select only the grapes from the highest and most exceptional part of our family vineyard.
Fermentation takes place at controlled temperatures (20–25°C), followed by a long maceration of 50 days with the grape skins, ensuring full extraction of aromatics and phenolic compounds.
Malolactic fermentation follows, with one month of lees contact in tank to enhance texture and complexity.
The wine is then aged for 24 months in French oak barriques, followed by at least 2 additional years in bottle, to develop perfect balance and finesse.
Chronos is a wine of depth and intensity.
On the nose: aromas of dried cherry, black tea, licorice, tomato, and leather, with subtle hints of oak and spice.
On the palate: structured, with firm yet ripe tannins, balanced acidity, and a long, unfolding finish.

3.Smash burger with caramelized onions and aged cheddar

5.Slow-cooked Greek dishes with depth and intensity, such as rooster in red wine (kokoras krasatos) or stewed goat

Serving Recommendation
Serve at 16–18°C in a large Burgundy glass to fully express its aromatic range.
Will continue to evolve beautifully in bottle for at least 10+ more years.
